As long as there's no snow (or worse, sleet), you should be able to do all of those hikes in February just fine, assuming you dress appropriately. Expect the temperature to be a few degrees above zero, so not really perfect hiking weather, but doable.
Do note that the weather in February is very unpredictable. It could as well be snowing heavily, or hailing, and those just aren't very good hiking conditions - but there's no way to tell in advance, and the Netherlands are small enough that conditions like that generally affect the entire country at once.

Most trees will of course be completely leafless in February, and daylight hours will be relatively short. The grass will still be green, though, or might even be exceptionally pretty and white in the early mornings with frozen dew.

All of the recommendations in the other thread were about hiking through environments that are more rare for the Netherlands (forests/dunes), not about hiking through the green meadows of the polders, probably because this landscape is so ubiquitous that us Dutchies don't really consider it a hiking destination. There's loads of bike paths leading through it, though, which you can also walk over, and make your own route the same way bikers do, from "knooppunt" to "knooppunt" (these are numbered central locations every few kilometers, which point the directions to the next numbered locations, together with a map of the region, so you can plan a route as you go along).

Here's (sadly again Dutch only) showing that entire network. (It currently has an annoying 'tour' modal dialog, but you can click "Rondleiding beeindigen" in the top right to get rid off that.) I also found for hiking based on a similar principle for most of the province of Zuid Holland.

Personal recommendation for an easy to reach by public transport forest/dune landscape with nice hiking: Take the train to (just north of Haarlem), where the edge of the national park Zuid-Kennemerland starts just a 2 minute hike away from the train station. Or for forest with some meadows, is nice, and reachable within an acceptable amount of hiking from Voorschoten station (the entrance is on the Papeweg, and the "Molenpad" on that map is one I'd recommend in particular).

thanks for the exellent reply
I look in to the links you posted and probably come back to you with questions
