Your best bet would be to check the various Web sites that specialize in cruises.
P&O Australia do some cruises from NZ, which may have Fiji as a port of call, but they're normally sold as round trip. Around your dates they have one, departing Auckland on 20th February.

I'm doubtful they'd sell it as a one-way trip but you can ask. I was aboard that ship eighteen months ago, it used to work for the UK market as Ocean Village but is now running fairly basic cruises where many things are optional extras.
Since flying is cheaper, there isn't much demand for surface travel options in the Pacific as a means of transport, so I think you may struggle to find more options. Sorry.
