Yes, you'll be doing a lot of driving; and you won't have time to do much of anything else.
I saw that you asked a similar question two years ago; and the suggestions remain valid.
There are many interesting places along the California coast; and it would be a shame to drive through them quickly, pressed for time. Suggest you rethink your itinerary, or extend your trip to more than the two weeks you now have.

I did do the trip 2 years ago with friends, but going back with my girlfriend this time around. Last time i had 3 weeks so had enough time.
We can't do longer than 2 weeks this time around unfortunately.
What would you recommend changing to make the trip less rushed?

Suggest concentrating on northern California, or southern California. The latter could include Vegas, which only is a 3.5 to 4 hour drive from LA. Or, you could drive leisurely down the California coast from SF to LA. There are lots of great places to stop along the way. I could offer some suggestions once you have a better idea of what you want to do.
Another alternative is to drive along the coast from Seattle to SF. That's picturesque, too. There are lots of options.
Some people dismiss LA as a place to visit. I lived there for several years; and I think it's worth spending time there. LA is a metropolis, with many types of communities within. It's fascinating. I enjoyed my time there.
