Why do you want a pick-up service? When are you arriving at Delhi?
There is a direct Airport Express metro train connecting the airport to New Delhi Railway station if that suits you.
Hotels near/opposite the railway station are a bit shabby.
Metro service is very good in Delhi which also connects to New Delhi Railway station. So you can choose from other nearby places as well.
You can also stay in Karol Bagh area which has modest clean & cheap hotels and it's not very far from the station too. Hotel people will arrange for a transport for you if you inform them beforehand.
Don't worry, I also travel solo. Just be a little alert and stay safe.

We have done this before,
There is a Sai International hotel in Dwarka , sector 11 close to the airport. They have pick up service from airport . They are on the net . A budget hotel but clean and with restaurant etc .
You can pre book a cab for earl morning drop at the railway station on the Ajmeri gate side . The journey will be about 30 minutes. I think the train is at 6 50 or so, A good train.
Must see Rishikesh and may be little beyond.
Any suggestions you may need on India , let me know .

Nisha, was wondering about airport pick up because it looks like my flight will get in to Delhi in the middle of the night. More for safety reasons than anything else! I will definitely check out the metro on your recommendation.

What class train ticket would you advise - I'm figuring AC Chair class is probably the best for a day journey on the train?

Try Ajay's Guest House, just off Pahar Ganj. They have 24 hr reception and a travel agent on site, so I'm sure they can take care of your airport collection. It's a sociable place to stay. The rooms are ok and acceptably clean... it's just more the convenience and they have a very nice 24 hr bakery. Rates around rs700 for single. It's close to New Delhi station for your morning train - maybe 10 mins walk. At 6.30am, there are people already buzzing around Pahar Ganj and it will be light (this time of yr), so I'm sure you'll be fine!
AC chair for that journey is best. On the 6.50am Dehra Dun Shatabdi, breakfast should be included (I did the journey in other direction a week ago!). Would recommend you to book as soon as you know dates though as trains busy...sometimes trains booked up over wk in advance.
Rishikesh is great. Laxman Jhula is a nice area to stay. Taxis from Haridwar usually drop off near the Laxman Jhula bridge (west of the ganga), and you can just walk across, turn right and there are places to stay down that street. If you take the bus, it will drop you in Rishikesh town and from there you can get an auto to Laxman Jhula bridge. Make sure you seek out Petit Momo :-) - super Tibetan soups!

I stayed in a hostel called 'Hotel the spot'
in Paharganj, its cheap and cheerful.
It does airport pickups.
But as the previous person said had i known i could get to new delhi station via airport link at much much cheaper i would have not got the pick up.
Hmmm...
I would have stayed back at the airport and catch the first Airport Express train for the railway station. Much cheaper and safer than going alone in a cab at night.
AC chair car is the best option and as Claireh said, the fare includes breakfast.
FYI, there is another train to Haridwar from Nizamuddin railway station at 11:50 AM.
