The Post Restante service delivers mail to the MAIN Post office in the given city - it's up to you to find out where that is, but your friends don't need to know.
e.g. I used the system in Brisbane and all you need to do is put:
SURNAME (in capitals), first name
Post Restante
Brisbane (...Sydney, Melbourne or wherever)
Australia
And the letters/parcels will go to the main post office.
You then work out where that is in that city (I don't know for sure, but George St is probably right, as it's in the centre of the CBD, but ask before you make a special trip) and pick up your parcels.
Don't forget you will need some form of ID, like your passport.

I am pretty sure it is Pitt Street too, about two or three blocks down from Martins Place It's Sydney NSW 2000 if I recall correctly

Sorry New guy, I saw your instructions but was relying on the info I used when in Australia. There might have been a change in GPO (I did use the Australia post system and saw that it's now marked as Martin Place 1) but it used to be at 130 Pitt Street (now listed as Royal Exchange). Having said that, the GPO never used to be where the Poste Restante mail was actually picked up!
Poste restante mail to Sydney NSW 2000 always used to be collectable at 310 George St., on the third floor of the Hunter Connection shopping center. It was open Monday through Friday from 8:15am to 5:30pm. This is however nearly three years ago and maybe the collection place has changed (it was a tricky place to find already back in the day I remember!). I think you could try calling them at 02 9244 3733 if that number is still right (yes, I did some more research before posting again).
That is the pick up only though, to send the mail address as follows:
LAST NAME, First Name
c/- Poste Restante
SYDNEY NSW 2000
AUSTRALIA
Whether it is Pitt Str, George Str or Martin Place, these lie about a block from one another so when picking up mail that shouldn't be a problem either way I suppose.
You could also use another post office in Sydney if you like, for example the Glebe one (near Central Station)

This system will work all over Australia as there is a post office or collecting place in pretty much any town. Any mail not picked up within a month goes return to sender....
Don't forget ID when picking up your mail and that most post offices are closed on weekends.
