There'll be lockers in effectively all dorm rooms (though read reviews of hostels beforehand - some very cheap ones don't have them). These lockers won't be quite large enough for your backpack (but no one is going to steal your dirty clothes, so that's okay), but good for your daypack with valuables. Bring your own padlock (though you can buy padlocks at reception at most hostels, too).
They're good for at night, or when going to take a shower, but personally I always carried my laptop with me in my daypack anyway when going out for the day; those little padlocks aren't that secure.
Opportunity theft from dorm rooms is unfortunately more common than you'd like - a camera or expensive smartphone lying out in the open is very easily snatched along - but as long as you use basic common sense, it's not a big worry.
Big centers for seasonal work tend to have hostels to cater to the workers. Don't expect to be able to find share accommodation available, though, as there's (understandably) a lot of demand for that. (This is different in the cities, where it's always relatively easy to find a house share; but of course no applicable specified work for getting a 2nd year visa.)
