Well, both routes should be interesting. Depends upon your preferences, I suppose.
Would you rather see the great southwest, or would you rather get to somewhere to enjoy a resort pool and then head out to a club at night? (Keep in mind you will have just left Las Vegas). Also keep in mind that it is likely to still be in the 102 degrees for the highs and 78 for the lows in Phoenix at this time, while it is likely to be highs in the mid-80s (84-85) with lows in the mid 50s in the Moab, UT area. For this reason, I would choose the trip up to the national parks in Utah--and if I wanted some "beach" time, I would spend some time on Lake Powell or at resort there.

You should also try to visit the north rim of the Grand Canyon on the way (if you haven't already visited the Canyon).
To do this, see my route for Days 2-4 (which takes you from Hurricane, UT (just west of Zion) to the Grand Canyon, then to Lake Powell, then to Monument Valley, and then to Moab. (To get to Hurricane, UT from Las Vegas, just go north on I-15 until you pass through St. George, UT (right at the border) then go another 1/2 north to state highway 9 and head east.

Definitely NOT interested in a resort pool and nightclubs, like you said we'll have been to vegas for that nonsense, plus I'm not that fussed about going to clubs, can do that anywhere!
Am still deciding between seeing the north rim if I drive up towards utah or getting the helicopter trip thing from vegas. Something else to look into!

Instead of going directly from SF to Yosemite, you might consider going via Lake Tahoe in the mountains at the border of Nevada. Tahoe is very beautiful. Another option is to go to the Sequoia/Kings Canyon National Park after Yosemite.
Don't rush through Yosemite - it's quite large, and at that time of year, Tioga Pass at a high elevation is open to traffic (provided it hasn't started snowing). Don't think that Yosemite can be seen in one or 2 days - I would give it more time, and don't just drive through the main section of the park (I'm not sure you can anyway - they might restrict you to their bus system these days).

Dawgon’s comments reminded me of a recent tourist's visit to Yosemite.
When the tourist arrived at the entrance to the park, he asked the Park Ranger a question: “Excuse me, but I only have 1 hour to see Yosemite. What would you do with that amount of time?”
The Park Ranger thought about the question for 30 seconds and then replied: “I think I would go over there (motioning to a tree stump about 100 meters away) and sit down for the hour.”
Surprised, the tourist remarked, “You would go over there and sit for the entire hour?”
“Yes,” responded the Park Ranger, “because I would cry for at least that long knowing how much I was missing by trying to limit a visit to this fantastically beautiful place to a mere hour”.
