Securing a job beforehand is almost never successful; backpacker jobs tend to start right away, so if at that point you're not even in the country yet...
One of the requirements for being eligible for a Working Holiday Visa is having AUD $5000 in funds to support yourself. You should be able to last for 2 months (3 if you go extremely frugal) with that amount of money, and that tends to be enough time to find a job.
Bar work requires some training/certificate ("responsible serving of alcohol"), and obviously people with experience have a big pre there. I'd expect the norm for farm work / fruit picking / etc to be that no one has any experience, so that should be much easier to get. Just a matter of being in the right place at the right time. The website has a PDF download which shows per region when specific locations have a high demand for workers, so you can arrange to be there.
