Sorry to take long time to reply, I'm traveling at the moment.
Here are a few ideas:
Siena - I loved little place called Zest Cafe - google it and it'll come up easy.
They have free wi-fi, which is hard to find in Siena (there are a few payed internet spots and no cafes (that I found) that offer free internet.
Another best thing - is that they have monthly ethnic food party, it's a lot of fun and we you get on their facebook list, they'll send updates and invites. The cooking is excellent and prices are very reasonable - it's just a fun atmosphere, you'll meet there both Italian and foreigners that live there.
Another great place - cheap, great traditional pasta and just around the corner from Pz Campo:

They don't speak much English and customers are mainly local Italians, but if you like more local experience right in the heart of tourist center - it's the place to go!
Florence: I really stayed away from food downtown, too expensive and not very good. I stayed on the foothills of Fiesole and it's a place to visit up on the hills - very lovely views of Florence and many neat cafes and restaurants. There is a free movie night on thursdays after dinner at a place I can get a name too if you want.
But mainly I would recommend going to Cave de Maniano: There are three trattorias on that hill: first is a family owned estate with their own wine, olive oil and oil press - their prices are not bad and so their food, the best part is the view - just breathtaking outside seating.
A few steps away is the second place - don't remember the name. A little more pricey and nicer
Third place right at the top is the cheapest and simplest place, the owner is really nice and food is good. There is also a Gelateria with home made gelato (highly recommend - hard to find well-made gelato, everything is powder-made downtown. Although people say Vivole & Grom chain are good.)
Also, don't miss the Oblate Library by Duomo - great views and outside seating, cafe, couches, books.
And last Bologna - don't remember food places, but I absolutely loved the city! It has a great feel, a nice balance between old and new, young energy. And my experience was Portico di San Luca. It's about 2.5 mile climb up the stairs and inclined stretches along a mountain side. Views are amazing, arches are beautiful and a lovely church on top.
