So I have only just returned from an amazing 2 weeks in Cambodia and Vietnam and my feet are itching for a much longer time away.
I'd say there is definitely no need to do a fully organised tour in any of the 3 countries you mention, but you could do a hop-on hop off bus such as Oz experience or Stray Bus in NZ. They are sociable and give you the chance to meet other travellers while getting you from A to B, but with the flexibility that a tour doesn't give you. You can choose to stay in each place for as little or as long as you like. In Fiji I used which were really good; I've also heard good reports about Feejee Experience.
I travelled alone in all those places and loved it - have fun!
