This is quite similar to my plan. I've just arrived to Australia (literally just - I'm at Brisbane airport working out what to do). My plan is to stay here for a few months before heading to NZ on a WHV, staying there for a bit and returning to Australia (potentially on a WHV if I wanted).
I have had friends do this and they had no problem. (note: I'm not an expert)
The only thing I can think of is if your tourist visa for Australia is the same as mine. It's a one year visa but there's a limitation that each trip to Australia can be for a maximum 3 month. Just check that when your planning to stay in Australia for 6-12 months. It may just involve a few quick trips to NZ that way.

Sounds like you dont have a tourist visa, you have a regular EVistitor visa which you get on entry. A 12 month visitor visa is quite an ordeal to get. I had to show bank accounts and statements with funds to support my stay, I had to do a medical and I had to have an interview at an immigration office.
To the OP, you would probably do better to do as jbolster suggests and just get an Evisitor and leave after your first 3 months, maybe time for your trip to Fiji, then come back for another 3 months. I think, the evisitor can be extended while in the country, but it doesn't come cheap. You can read up on the various visas on the site.

Just as a bit of an update to this (since I did the Fiji visa run a few weeks ago).
I spent my first 3 months on an eVisitor visa and then crossed to Fiji, applied for the Working Holiday Visa, and then returned. There was some questioning by immigration when I returned - nothing major though. They just asked me about what I did before Fiji, what I planned to do now, how much money I had with me, and how much money I had when I first entered Australia. Didn't have to prove anything to them though!
The only reason to mention it is that if you were to pop back and forth on a tourist visa, you might get to the stage where they'll ask you to prove that you haven't been working (after all, it might seem unusual to them for you to be out of work for up to a year and still have enough money to live).
When I got to Fiji, I applied for my Working Holiday Visa and had it granted within an hour (yay).
Not sure if I prefer the way I did it. A load of travellers I met spent the first 3 months of their visa travelling and then started looking for work - so they only have 9 months left on it (3 months of that to do their rural work). On the other hand, I had to spend money to leave the country and get the visa but there are worse things than having to go to Fiji! Some places are cheaper than others for this (Darwin to Bali, for example) but I did Melbourne to Fiji since flying to the opposite side of Australia was too much.
If that's the route you're going for, maybe plan in advance your flights and to be at your exit point then
I think you'll know after 3 months whether you want to come back on the WHV or not - rather than extending your tourist visa. I definitely did!
