As of now i will arrive in Sydney 29th November, and staying a couple nights there.
I have not booked any other accommodation, and i know December is a really busy month, at least in Sydney. (or is it all over Australia?)
As far as I know, it's just Sydney that has the December problem. And some places nearby.
In fact, if you come down to Melbourne in December, I think you'll find plenty of accommodation is available because everyone's in Sydney around then Melbourne gets busy in January though when a lot of people arrive for the Australian Open.
I can't give any promises, but as long as you're not trying to stay around Sydney in December, then I think you'll be fine without pre-booking. Of course, the nicest or cheapest places may well be booked out, because it is peak season after all. But I don't think you'll have too much trouble finding at least something.
As Peter says, Sydney is the main issue in December, with the rest of Australia being a lot easier. But you have to be willing to stay in some dodgy places on occassion if you wait too long to book and all the nice places are full. You might also have to spring for the occassional hotel or motel if the hostels are all full when you arrive somewhere or you don't want to lug stuff half way across a city to get to a free hostel.
