Am travelling to Europe next August with my wife and 7 year old daughter. We have 19 days to spend. We arrive in Amsterdam, and are departing from Paris. Looking for suggested itineries. Am thinking of finding 3 'bases' from which to travel. Would like to find a balance between culture and fun. Any help or suggestions would be much appreciated. Thank you.
August is school holidays so everywhere will be crowded, with transport and accommodation filled up and high prices so book fairly early.

There are some theme parks like Efteling in Holland and Disneyland outside of Paris. There is also Versailles nearby.
You could spend a little time by the beach at Ostend in Belgium with maybe a hop on the train to Brugges for some hours.
You could travel to Rouen which is the old capital of France with some scenic old buildings. It is 90 minutes train ride from Paris.
The number of things to do and places to visit, is sheer endless, even litterally between Amsterdan and Paris !
:-)
There is a lot of "Belgium" inbetween both cities as mentioned !
If you like , I can tell you lots of things to see and do in any niche of interests.... culture, nature, festivals & theatre, kids fun ... whatever !
This is a nice introduction to view :
