Bars, most are around the Cowgate and Haymarket.
The Banshees Labrynth is open late and on Niddy street.
Opium - rock bar, Cowgate.
Bannermans rock bar, Cowgate.
If you want some more local type bars, try the Brassmonkey - off Nicholson street, Lebowskis, on Morrison Street.
The Blue Blazer is a good bar with alot of beers.
Try the Broughton area as well, alot of good bars there.
Restaurants, what you like?
There's an excellent Indian - Imans, on Homes street, across the Kings Theatre. BYOB
Looking for Haggis??, best place is the Last Drop Pub in the Grassmarket
Another very good indian restaurant is "mother India" in Infirmary Street, one the corner of South Bridge.
If you are travelling in the city using the LRT (maroon coloured) buses, they sell from the driver day tickets which give you unlimited travel that day on their buses. The drivers do not handle cash, you put your money in a machine (It doesn't give change)
I've stayed in two hostels in Edinburgh and was equally happy with both of them:
High Street Hostel in Old Town
Princes Street East Backpackers in New Town
If you're interested in a pub crawl, Rose Street is the place to be. Otherwise I second the suggestion of heading to Cowgate and Haymarket. Oh, and be sure to check out the Frankenstein Bar if you want a novel experience!
Typical touristy things to do: the castle obviously and Holyrood place for your history fix. Arthur's Seat is a nice walk with some great views. Check out a whisky distillery if that's your thing. Also there are the vaults/catacombs underneath South Bridge - very creepy, but interesting! If you're at all interested in geology or earth history, Dynamic Earth is well worth the visit.

I already booked the hostel, castel rock hostel. As I'm going with some friends, probably will check out all the bars you guys said heheh i'm going on the 16th, after that i'll post what I liked more.
