I have been to Spain, France, Czech, Italy and Netherlands and hoping to spend 2 weeks this summer somewhere else in Europe and travelling around that country. Im big into Architecture and also really nice scenery. Also like to try out the local brew and some good food. Any help would be appreciated.
Saying "scenery" straight away makes me think of Scotland and Norway.
Scotland also has some interesting architecture (around Glasgow lots of Charles Rennie Mackintosh buildings).
Norway's architecture is more about wooden "hytte" with grass roofs :-) but the stave churches are interesting. Expensive though.
In Eastern Europe and the Baltics the scenery can get a bit flat and dull, and for their architecture there's a lot of "soviet brutalist" buildings. Some high spots, though - Tallinn old town is great, Riga central market is great. But generally not the best region. And Western Europe you've done, so maybe time to look north.
If you are into good food and local brew as well as architecture, I don't think Norway would be that great... I love this place, but it's quite expensive if you want to sample the good stuff here Definitely one of the most beautiful countries in Europe though!!

Slovenia. Absolutely beautiful country with an interesting cross-section of cultures. I loved it there.
I recommend Iceland, it's cheep and trust me plenty to see.

If a combination of architecture and scenery is your thing, you might also combine those two in countries like Germany or Switzerland.
Easy transportation by train and bus (or renting a car if you want) and Germany actually is not expensive, probably a little cheaper than most of West Europe.
Switzerland is more expensive, but if you go out camping it's actually not expensive.
Cities like Berlin, Munich and some smaller Bavarian towns, but also Lucern, Bern etc are pretty cities, speaking both out of experience as well as info by others.
I have camped in summer in small places like Leuk/Leukerbad in the Rhone Valley in Switzerland which is an excellent base if you like exploring the Alps.
