First of all Greece has a great mainland too, it is not only about the islands, while some groups of islands are easier for island hopping than others... Islands "hopping" is popular because a) ferry system work that way that 99% of the time you can not been based on an island and make day trips to other islands b) A few days on each island are a good way to get a glimpse of a few different destinations c) People tend to look on quality rather than quantity and d)Most people are not aware of what a great treasure mainland Greece is and always go by the most well-marketed destinations rather than doing their own research.
Different people travel differently and enjoy different things... I find that some people get sea sick easily, so island hopping might ot been for them. Other people like the sailing experience on a ferry and face it as a mini-cruise. Some people just think of ferry rides as a necessity to connect among points. On my opinion it depends also on specifics like how long/often you plan to travel for, where exactly, what type of ferries you plan to use etc.
If you are willing to share some more specific ideas of you, I may be able to help with some pointers. It is important to share your interests, when exactly on summer you plan to visit, for how long, what are your must-sees/dos etc.
