Belgium is not in your list, but I can tell you this : summer in Belgium, is almost a synonym of city festivals "everywhere". Most probably, Belgium-in-summer, is the biggest stage on earth! Cities of Gent, Oostende, Antwerpen, Brussels, Hasselt, Leuven, ... etc etc ... all have festival fever !

Definitely check out Eurail passes. They give a 35% discount on passes for travellers under 25 years.

If you want festivals and Edinburgh - how about the Edinburgh Fringe? Running 2nd-26th August in 2013.
For travelling in the UK it could be worth looking at Megabus - takes longer but is much cheaper than trains - depends what is more important to you. You need to book online though but that shouldn't be too hard!
St Christopher's, like most hostels, is definitely good for meeting people, though you can choose to engage with other travellers as much or as little as you like. There's often social events put on by properties that help to meet fellow guests, so there's no need to worry about travelling solo.
