Hi,
Tasmania; specifically Cradle Mountain and around. It's almost comparable to being in New Zealand, nature-wise.
I imagine it'll be quite touristy that time of the year - but you shouldn't have too much difficulty finding a couple of not-quite-so-popular hikes and getting away from any hypothetical crowds.
South Australia is worthwhile, especially around the Eyre Peninsular. It's wasn't crowded when I went in January 2011 and has beautiful beaches and camping areas, I've got some pictures in my gallery you can check out if you're interested.
