I won't be joining you but I spent time volunteering in Uganda a couple of years ago. It is a wonderful country and I would highly recommend it (it borders Kenya). I can tell you more if you are interested. If you haven't got a volunteering position yet, I spent quite a bit of time collecting some useful links for free volunteering opportunities (ie no administration fees).
