I am moving from NYC to SF and have decided to drive across the country! I am looking to accommodations for the each stop and I have no Idea where to begin. Would it be better to look into Airbnb's or hostels? Any recommendations would be greatly appreciated.
You'll find few hostels where you are going, particularly in the middle of the country.

Some churches also offer accommodations in the U.S. When I was overseas in Jerusalem, I stayed at a Lutheran guest house. More recently, I stayed in a hostel run by nuns in Ruteng, Flores, Indonesia. You might be lucky with Airbnb, but you'll probably have to stay in some motels along the way. They don't have to be expensive. Besides the chains, there are lots of family-run establishments. There are lots of choices to suit all budgets.

I like Airbnb because you often have the help of a host in each city to show you around or just to tell you where to eat, etc. Just be extremely careful and extremely picky about the apt or home you choose, and location is another important factor. These days motels are way overpriced, and their facilities are usually either sterile or very poor.

not sure what the research is for. there will be signs before each exit that list the lodging, gas and food that is available at that exit. you can also do a search as you drive along. when we moved from st paul to seattle we just pulled into motels as needed. we lived.
Airbnb or hostels are a good possibility. Search the web for locations, but if you find too few or not enough, you can find a lot of motels and lodging along the was as katzgar suggested. I drove across the USA without any plans for stops. I just looked as I went. There are a lot of reasonably priced motels along the way if you can't find any Airbnb or hostels in the area. You could also check out couch surfing on the internet.
When I traveled to America, I booked my accommodation on time, before my trip and it was based mainly on the search for hostels and motels. Motels turned out to be more cost effective and better choice of accommodation, considering that every room in the motel includes its own toilet, what was very important for me. In the hostels I don´t prefer only the fact that the toilet has to be shared with others. Airbnb has also become very popular lately, and I've heard a number of good recommendations about its accommodation.
