I'm by no means an expert about Mendoza, but from what I saw on a daytrip to the wineries, there really didn't appear to be anything there which'd making camping out there a good experience. (Obviously there might be exceptions, especially if one of the wineries itself were to offer a campground and facilities...) Personally I'd opt for a guesthouse in the city, and just bus out to the wineries. Mendoza is still not the most exciting of cities, but it's pleasant enough once you get to know your way around, and has some truly excellent restaurants (if you're willing to splurge a little bit: Molokai on Av. Belgrano, just west of the Plaza Independencia - superb fine dining in a wonderful courtyard).
