I'm not free to join but I would say that if your going to Interlaken, then make sure you take the train up to Jungfraujoch, it's a glacier with a observatory and a train station inside the mountain. I took the train from Lucerne and the scenery was sublime, if I could do the journey again I'd stop off at some stations we went through, namely Grindelwald and Meiringen.
With regards to the rest of your trip, it looks like a good itinary, I'd also add a trip to Lake Bohinj in Slovenia - not too far from Lake Bled - it isn't as fairytale pretty but has more of a dramatic scenery majesty to it. And also a trip to Plitvice lakes and waterfalls in Croatia, their about a 2h drive/coach ride from Zagreb and are a series of stepping waterfalls and lagoons with wooden paths that follow the flow just above the water.

Awesome, I like the sound of the train station within the mountain, I'll definitely see if I can implement some of your ideas into my plan. All early stages at the moment and obviously I want to fit quite a lot into a short amount of time. The suggestions are very much appreciated! 👍🏻
