Melbourne - Adelaide - New Zealand - Sydney - East Coast

So I fly to Melbourne tomorrow and am planning to do the above route. My plans at present are as follows:
Melbourne - September 2015 then the great ocean road to Adelaide and then up to Aires rock hopefully in October 2015. then hoping to fly to New Zealand for November and December 2015 before getting back to Sydney for new years and then finishing up doing the east coast January/ February 2016? What do you guys think do you think this is a decent amount of time to get it all in? I do have a years visa but just not sure at present whether I want to stay a whole year or just have a very busy fun filled 6 months?

Some notes:

The proper/respectful (aboriginal) name is "Uluru", not "Ayers Rock"; though the latter still identifies the airport.

If you haven't booked accommodation for NYE yet, do that as soon as possible. I'd expect all halfway decent accommodation to long since have been booked solid - NYE in Sydney is extremely popular, and most places have crazy surcharges (10x or more the regular cost), and minimum stays of 1-2 weeks.

The north of Australia (from around Brisbane up north) doesn't have the regular four seasons you know, but instead just two: the dry season and the wet season. The wet season runs from December through March, and so your projected time to travel the east cost of January/February is smack in the middle of that. This does mean it's low season, with lower costs, but all the same you might want to visit during a different time of the year.

If you're going on a WHV, which it sounds like with your "years visa", be aware that those are only "once in a lifetime" (unless you do three months of specified work to qualify for a second one), and so I personally would consider it a bit of a waste to go for only six months on it, particularly with two of those months spent in New Zealand. If you don't intend to work, you could just have gotten a free eVisitor and done the twice two months of Australia that way.

New Zealand is an absolutely amazing country, which I love even more than Australia. Two months is a decent amount of time to spend there, but don't hesitate to make it even longer - the country definitely has the sights to fill pretty much any amount of time. If you happen to totally fall in love with the country, it has a WHV-scheme of its own.

Finally, it's natural to be scared when setting out on an adventure of this scale. There's really no way you can properly plan ahead for such a length of time. But be assured that once you're there, things will start making sense on their own. It's really not that strange a country, and the backpacker infrastructure is absolutely superb. There'll be friendly and helpful people manning all the desks at the hostels you'll stay at, and plenty of fellow travellers more than happy to talk your ears off with tips and advice.
Anything you've forgotten, you can take care of while there. You'll learn new routines for exploring unknown cities and making yourself comfortable no matter where you are. Don't expect too much of yourself during the first week or two, don't try to cram in too much or hit too many checkboxes, but Just give yourself the time to adjust and get your bearings, and you'll see that it'll all follow naturally.

Have an amazing time!
