There's probably a couple of things which would cause more attention to be paid to your application ("sex work", "smuggling", "selling drugs", ...), but anything in line with regular backpacker jobs shall be absolutely fine. Most applications are approved within hours - there's probably not even a human looking at them anymore, unless there's something which causes a computer to flag them up for review.
"Bar work" and "hospitality" are both absolutely fine, Don't worry about it.

Your reply there led me to another question, I was planning on filling the application in and sending it off in the post downloaded from the gov.aus website.
1. Is this the best way to apply or shall I do it via computer?
2. I of course thought the best way to retrieve the application form was from the the official gov.aus website, would you agree?

You mean http://www.border.gov.au/ ? I'm surprised they even offer a non-online way to apply, but I see .
So, yes, definitely apply though that website. The online form is faster (as I said, usually gives an approval within hours), and probably less hassle (as long as you have a creditcard to pay with), but sending in the paper form will probably work just as well. The choice there really depends on what you're personally comfortable with.
