With only two and half weeks off I would, to be absolutely honest (which I hope is what you want ) I would forget SE Asia. It will take you a full 2 days of travel to get there and you'll be rushing around non-stop. Two months is barely enough to even scratch the surface of the Philippines and Indonesia, let alone 2 weeks.
Budget-wise you might not go very far in Europe - despite the crisis Spain remains an expensive, if beautiful, destination.
My own personal recommendation from your selection would be Peru. Return fares from NY to Lima start at very low prices (search just now on Kayak: NY to Lima for 3 weeks in March: GBP373!!! Less than half what it would cost from London. Peru is cheap, easy to get around, and 2.5 weeks is enough to, say, visit Lima, Cusco and the Sacred Valley, and Arequipa/Canyon country.
I'm not biased towards Peru! I have been to every one of the countries you name and enjoyed them all, but for your time available, budget and country of departure I think Peru absolutely fits the bill.
Only one thing: you don't say when you're travelling. Seasons in Peru are marked and you would have to check this out first!

Ditto Will. With only 2 1/2 weeks stay in the Western Hemisphere with one day travel time and keep it to one country. I'd suggest Peru, Colombia or if you're a bit more adventurous perhaps Cuba.

Not sure about rules regarding visitors from the US to Cuba though, but that's a whole other thing.
Regarding budget: it's probably a lot cheaper to fly to one of the Central American countries compared to South America, although Colombia might not be much more expensive.
Saves you money to spend in the country/countries itself. Can not recommend countries in Central America though, never been there, but I really think it's a pretty decent mix of nature and culture so perfect and not expensive, though not overly cheap like SE Asia either.

Thanks guys! I will be traveling in May, which I think is a good time to go to Peru. Appreciate the feedback. I had a feeling SE Asia would have been too much; thanks for affirming it!
