Biking and camping: Alternative travel?

A friend and I (from Canada) are planning travels through Mexico, Guatemala, Belize, Honduras, Nicaragua, Costa Rica and finally Panama. We are ultimately looking for an escape from North American society, and we want to explore the possibilities of extended alternative-style (here meaning, not "vacation in a resort for two weeks", more immersive) travel.
We're hoping on extending our trip as long as possible (1 year or more) by cooperative living and working (i.e. WWOOFing, or workaway) paired with budget-friendly travel, dining and staying. By budget-friendly, I mean in particular we're actually hoping to travel by bicycle and stay in a tent when possible.
Of course we'll be doing some very good research on which places are best to avoid safety-wise, but overall, I'd like to ask if anyone's attempted a bicycle trip through these countries before, or been camping (not in an RV) in any of these areas. I have previously lived in Central America, so the climate/general conditions will not be a surprise to me, but this way of travel and accommodation is completely new for me in this area.
Does anyone have any suggestions/links/book recommendations/stories they could share?

It's a sweeping statement and there are exceptions of course, but by and large most of Central America is too dangerous for wild camping. Do some research, you'll see what I mean.
