There is an absolute avalanche of information on the Pan American Highway. It's a very popular route for long distance road-trip travellers of all descriptions. Google is your friend, it's easy to find lots of up-to-date blogs that detail every aspect of every border crossing as well as every other situation you can imagine.
My dos centavos... make a binder with a section for each country's border crossing paperwork. Have multiple copies of your registration, insurance, ownership papers, driver's licences, etc. in the binder. Those Latins looooove their useless paperwork... Also, start researching how you'll make the jump from Panama around the Darien Gap to South America... sometimes the cost is a big surprise.
