hello!
I am backpacking south and Central America this fall(leaving November 23rd) and have found that you need visas to get into most countries. How can I get these visas? Should I get them before I leave? How much do they cost?

Impossible to answer your question when you give no clue of your nationality and no clue which of the 20+ countries and territories in Central/South America that you're intending to visit.
Google the Embassies of the countries you wish to visit and all the Visa information will posted.

Sorry, I am a Canadian, and I am visiting landing in Costa Rica, and travelling through Panama, Colombia, Ecuador, Peru, Bolivia, Chile, Brazil and Argentina,
No worries. Google their Embassies in Canada and all the Visa info is on their websites.
