Yes you rightly say it will be time consuming as well as cost expensive your decision will be right to celebrate Christmas over England.
You might like it here in Portland, Oregon. Portland is one of the cheaper places on the West Coast, and you could stay right in the city or ski up at Mt. Hood, nearby. You could also do Portland and Seattle (3 hours north by train). The downside is that this is rainy season in the NW, but rain can happen anywhere.
You need to indicate your budget and likes/dislikes, winter vacation or the opposite?
If you've got Christmas free, I'd go warmer!

Using the above tactic, I search Grand Junction to U.S. and found out there are cheap flights to Vegas. Not saying you should go to Vegas, but it's a major hub for U.S. cheap flights. From there, there are flights all over - California, New Orleans, Texas, Florida... for under $50 one way. Fun!
If you can get over to Denver, there are flights in December to Arizona, Chicago, Texas, California, Florida, Atlanta, and Portland for $50 or less.

You might consider going to a ski resort (as already mentioned) or else get a Christmas trip to a place that specializes in celebrating Christmas. Levenworth, Washington comes to mind--as does Santa Claus, Indiana.
One last place that wouldn't be too expensive, but that has quite a few Christmas celebrations (and that is near where you are at) is Durango, Colorado. Maybe go there a few days and then to Taos, New Mexico--just a short ways south (which is both a ski resort and has Christmas celebrations).

If you want a white Christmas, you might try the ski resort of Aspen, Colorado. Seeing as how you are already in Colorado, it might be easy to get to. I have spent a Christmas there and found it to be really great.
If you would prefer the experience of a warm Christmas, consider San Diego, California. There is much to do there at Christmas time. They have a parade of lights where boats sail in a parade in San Diego Harbor all lit up with Christmas lights. The best place to view this is in Seaport Village. If you do not get there in time to see this parade, you can still enjoy Seaport Village. It is along the harbor and you don't need to bundle up.

So I am currently on exchange to the US from England, living in a small city called Grand Junction, CO whilst I study. I like it so far, everything is exciting etc. but thinking about Christmas time, it's going to cost me a lot of time and money to get all the way back to England for only about 3 weeks and I'm not sure how worth it that will be. So I'm looking for options of where to travel within the states, I thought about doing some volunteer work over the holidays? Maybe stay with some friends I made here for a few days but I don't want to burden them over the whole holidays. I'm not really sure what I want to do yet. Any suggestions?

Hey Bill, I think it might be best to look into hostels, they are cheap and affordable..but also most hostels also have this thing called workaway programs...It's where you work for a free bed and meals, it might be a good option. They have hostels all over from Los Angeles, New York, Chicago, Miami, Las Vegas. If you want to have a warmer winter then go to Los Angeles, San Franciso, San Diego.
There are many places in US where you go for Christmas Celebration. It is cheapest for Christmas celebrations.Last year me and my friend is going there for Christmas Celebration. we both enjoyed there. you should have to go there.
Maybe travel somewhere where the weather will be mild. Some snow on the ground is always good to see but be careful you don't go somewhere where potential blizzards can occur. I always like visiting Maryland in the winter. Annapolis is a beautiful water front town with good food and an interesting history.
