Not sure what your plans are, but I'm off to Morocco (only for a week, sadly) over Christmas and our current plan is to hit Chefchaouen, Fes, through the desert - camel trek, sand boarding, the high and middle atlas mountains, etc. - to Marrakech, and then home. We're basically doing a shorter version of what you have planned, on a private tour between Fez and Marrakech, and I'm happy to provide feedback on anywhere we've stayed / any groups we've taken if you drop me a message after the holidays.
