It is going to be hard to do both the north and south islands in one month. Do you have some key areas in mind? Maybe pick a few spots and tailor your packing list accordingly. It will be spring/summer here and people like to hit the beaches in good weather.
The weather is usually good here at that time of year but, like the UK, it can be very temperamental. If the sun's out and it's not a southerly wind then the country hits the beaches. But on a cloudy day with a strong southerly, you'll need to rug up. And on the west coast down in the South Island (Milford Sound) it can rain a bit too, even in November and December. So, if you're walking the tracks, you'll need layers from shorts and t-shirt to fleece and waterproofs and you'll most likely need togs and jandals (bathers and flip-flops) at some point in your journey here.
