I plan on spending time in Sevilla and Cadiz studying Spanish, and spending a week traveling up the east coast (probably staying in hostels) as far as Valencia. I'd love to hear if anyone has done something similar, or has any advice for me!
It's always good and wise to ask people in advance of routes and other expenses. I don't want you to doubt people but just make sure you know who to trust when you ask for directions and how much to pay. Also, book accommodations earlier. It would really lessen the hassle.
Spain is quite safe if you use a little common sense, but yes, beware of pick pockets. They got me in Lloret de Mar.
When are you going? It can get quite hot in inland Spain in mid summer. One year I travelled to Seville by bus in late September and was told that in August they had had temperatures up into 53.C.

And indeed, in inland Spain it could get very hot in July/August... Although it's beautiful over there! You might need to consider to travel particulary around the east coast.
Of course always be aware of pickpockets in the big cities and especially when you're travelling with public transport. Just be careful and don't act too touristic, if you know what I mean. Watch your bag and take as less valuables with you as possible, just leave them in a locker or something in your hotel/hostel.
Keep an eye on inland flights, they are often very cheap and they will give you the opportunity to see the beauty of Spain in a short and cheap period of time. I just booked a return flight from Barcelona to Malaga for 18 euros!

I live in Bilbao, and whenever I travel around Spain I always see a lot of solo female travellers, so you'll be in good company. There are a lot of great small towns on your route, so make sure you don't just hit the big cities. I loved Ronda, which is pretty close to Sevilla, and there's a really cool natural park with amazing views on the way to Cádiz from Tarifa.
Like everyone else has said, just be aware of your surroundings. Also, one thing I've noticed is that Spanish people love to help, but sometimes they'll try and help even if they don't know the way, so it's usually best to ask a few people to confirm directions.

I'll be going in the first few weeks of July... Sounds like I should prepare for the heat then!
I'll definitely keep an eye out for those 18 euro flights (that would be insanely convenient), and make sure to plan early.
I am planning on avoiding the big cities, right now I'm thinking Cadiz, Tarifa, Ronda, and Nerja.
