Book in advance. If ever you have booked the wrong departure, just have it re-booked. Major airlines and even those not-so-big one allow rebooking. Just watch to have it rebooked before it goes fully booked. You may want to avoid the peak season.
So during your trip you just have to save the rebooking fee and not the whole amount of fare.
book your flights to and from the furthest point you will be away from home - eg Manchester to NZ or Australia. You can always change the flight dates and order - just check the ticket restrictions with your travel agent (or website) to make sure they dont charge you for each change - sometimes it is worth spending GBP100 more to avoid charges for changes (especially when you have no fixed plan). Buying two one way tix will be MUCH more costly!
