I think if you are going for 2-6 months, then there is no need to plan details.
Have a rough idea of where you want to go - like the first month in Rajashtan, a month in the mountains, third in the middle, last month down south - that sort of thing. Maybe from each region that you plan, pick out 2 or 3 must-see highlights that you definitely want to visit. That will give you a nice rough plan for your trip, and that's all you need.
You are right that sometimes trains book up in advance. But that is only a problem for people who are not flexible in their itinerary. If you have the time to wait another day or two in a town, or take a local bus instead of a train, then you will always get where you are going eventually.
The last time i went, it was only for two weeks. I didn't book anything, and when I arrived in Delhi, there were no trains to Jodphur for another week. So I just cut that out of my itinerary, and went to Udaipur and Bundi instead. If I had a set plan in mind I would have been very disappointed, but I was willing to go with the flow so it was no big deal. I would adapt that kind of mind frame, and you will have a wonderful time.

Giving India a miss would a sin if you come to Asia. You need to have a rough idea of where all you would be going and plan accordingly. There are both AC and non-AC coaches in trains, although some trains do get booked pretty early, sometimes as early as a month or 2. But, you can always try to get a ticket in the 'emergency' quota which opens one day before the train journey date. Otherwise, there are also many buses, including AC ones which ply, atleast in all the major tourist destinations in India.
I am confident you wont face any trouble for travelling, but yes, you are advised to always keep checking for tickets.
Meeting people in India is not that difficult. Many foreign backpackers come to India all year round. Some popular places are- Goa, Delhi, Jaipur, Bangalore, Mcleodganj. In Delhi- Paharganj is an expatriate area.

I am sure you'll find lots of travellers once you arrive.

The time you have chosen to come to India is a great time like you are coming in September for around 2 to 6 months.

Delhi and Banglore are commercial hub of India. In Delhi you can find the forts like, Red Fort, Qutab Minar, Humau Tomb, Jama Masjid, Gurudwaras, President house and Museums etc.

In Agra Obviously "The Taj"(The Symbol of love), Fatehpur Sikri and Itmad-ud-daula's tomb.

India is also popular for luxury train tour like Maharaja Express, Deccan Odyssey, Palace on Wheels and Golder Charriot. In this train you will have a Royal treat and you will come to know about Indian culture and welcome These luxury trains booking has already been started. Personally I will suggest you Maharaja Express because it is the best luxury train and have also won award for its facilities
