No, there are at least 300 inhabited islands.
We of course would like to go off the beaten track places and take time.
Lau and Kadavu are the places you want to visit.
Is it easy to fly out of Nadi to other Oceania Islands (Cook, New Caledonia,...)?

Oh dear, that's a difficult one. I love Fiji and it is just the most wonderful place to chill out, but I don't know that I'd spend nearly 10% of your time away there. Even with exploring the nearby islands, a time frame of 2 to 3 weeks may be more appropriate.
Just so you have some sense of timing, most Fiji vacation packages are 7 to 10 day packages.
