No such thing as a cheap fare from Bangkok to Europe. Just less expensive fares, usually by going off peak times.
Yes, flying in the wrong direction can cost big bucks. Have you checked out Round the World tickets? Provided you keep travelling in one direction, some are not too expensive. Flights within Europe are fairly cheap so you can get one from many places in Europe to Verona.
I would do Bangkok this time and Verona another time. Besides your family, lots and lots to see in Italy and the rest of Europe and that deserves a holiday of it's own. Besides, best time to see Asia is when it's horribly cold in much of Europe, and best time to see Europe is when it's very wet in Asia.
There are tons of options for flights from Bangkok to Europe (both airlines and routes) and we can't know what'll be the cheapest one on your travel dates.
Skyscanner can be a good option for you. Introduce Bangkok as your departure point; an a country as your arrival one. As it seems you can fly to several European countries, I think you'll have to look for fares to each country separately. What results did you get when you used that web?
