Been living here in Thailand for quite some time and I've seen the North, South and West. Like you I have my eye on the East, which I will do in December. I have read about it and it seems that beaches in Trat marks the spot, particularly Koh Kood.

You have enough time for a week or so in VN. I suggest you allow a few days for if you want to get out of the hot, humid weather of HCMC. Cool, green, pretty, nice contrast to most of SVN. Perhaps a few days in before heading over to Phnom Penh. talks about my experience riding the bus: HCM-PP. A few days in PP and then to Siem Reap. Here is a for all things Cambodia. One long day overland back to BKK. Since you have been to Tland before, I will assume you know where you want to spend your time. Good luck with your planning.

You have enough time for a week or so in HCM. I will introduce a program of tourist attractions that you can visit: Cu Chi Tunnels , Mekong Detal (day trips), Mui Ne - Nha Trang Beach - Da Lat ( 5 days 4 nights) or Phu Quoc Island (3 days 2 nights), etc.
From Vietnam to Thailand travel overland , you can take the following route: HCMC - Moc Bai Gate - Phnompenh - Siemreap - Poipet Gate - Thailand.
