What was your favourite food, while you were there?
This is always a big factor in my holiday - Is there going to be any good food?
While I agree with everything you say about Rajasthan, why do I have this sneaky feeling that the tour guide you'd be recommending is actually you!
BCake, Real Indian food is very different from the Indian curries we love in the UK and USA. They are usually either bland, or blow your head off and made with poor ingredients. But hey that's authenticity for you!
I'm a very picky eater, but I still found plenty of great things to eat in India, you just have to stick to more touristy places that cater more for the westerner.
Favorite? Id have to say a chicken soup in jaisalmer fort with a rooftop terrace over looking the fort at sunset.

Dodger, are you serious? Bland or Blow-your-head-off? I've spent a pretty significant amount of time in India, and I never experienced either.
I just about always stick to local places, and the food was AMAZING every time. So many tasty curries, and dhal, samosas, dosas.....

I was in India for a total of 2 years. Do you know that not everyone has the same taste buds? So things that are tasty to one person, can taste very different to another. Funny world ain't it!

Sorry if I made it sound suspicious, I am just a French traveler who loved Rajasthan and had a blast thanks to the tour operator. I wanted some “roots” travel and they organized everything perfectly, I went through villages and took sleeper trains as I wanted, and they took care of everything (one time the train was delayed so they rescheduled all the other trains and visits so I could still stick to the visits program, last minute), they welcomed me at the airport and offered me diner with part of the team for my last evening. I really loved it.
Anyways, I was very sensible to spices so I have to admit I was not a huge fan of the local food but I still manage to eat great things. I particularly appreciate the garlic naan with the saagwala chicken, a really gravy spinach chicken! I also generally liked the sizzlers, real simple cuisine but the appearance is nice and the dish always tasty. But again, I was highly sensible to spices…
Hope I changed your mind, and of course I sound like I’m selling Rajasthan, but it’s just because it was the most intense trip of my life so far!
