Any information about your interests would likewise be appreciated, so that people can actually give some responses which are useful to you. I mean, I could now start raving here about my favorite hikes in the Cordillera Blanca in Peru, but if you're not interested in doing long and strenuous hikes, then that'd be rather a waste of time for the both of us.

But yeah, all three of us are pretty open minded, we aim to explore pretty much anything possible.. Top sights to go and see? Adventurous activities to do? Like I said we have no limit on time so any mountain regions, areas of jungle etc that your recommend we would definitely try out?

This is mostly useful info on Central America...
First of all: Get away from the tourist or "banana pancake" trail (named so because all the hostel (of which there are one or two in each city every backpacker goes to, and they hence serve this long time favorite as breakfast)... In particular local culture will be really hard to experience partying every night away in these places (though they are good breaks from it all - especially if you don't speak Spanish)... But be sure to visit the random villages and towns not in any of the guide books, it will be rewording given the local hospitals nature!
Jungle hikes to lesser known Mayan ruins combines the exclusiveness of the jungle and the historical/cultural sights of the Mayans... Tikal (in Guatemala) is crowded, but still a must, however there are plenty of lesser known sites that offers more rewording ways to get there by the standard hostel-minibus...
Surfing is good both in El Salvador and Nicaragua, while dive certificates should be taken on Honduras' Bay Islands (however, if you don't dive, don't bother the seasickness of getting out there).. Trekking/climbing Volcanos can be done in Nicaragua as well...
Ohh, and get through Costa Rica and Panama as quick as possible - prices go up more that I like to think back at - and while natural parks of CR are very pretty similar can be expected elsewhere - Bolivia and Colombia are good for that...
Lastly you need to think hard about how to pass the Darien Gap if you're not up for flying or a $300 (per person) boat-ride...
Adventurous souls should check this options (note that some of the private motorboats sailing the short trips are used by smugglers in the north-bound directing) while it also includes a 1 km walk through the jungle:

Hi - just back from South America (Chile, Bolivia, Peru, Ecuador). The best bits for me were: 3 day, 2 night drive across the Bolivian salt flats from San Pedro to Uyuni, an afternoon down the mine in Potosi, 3 nights in Madidi National Park and a further night in the pampas near Rurrenabaque, watching a 1st division football match in La Paz, visiting the floating islands near Puno, hiking down and then up the Colca Canyon at Cabanaconde, hiking the Inca Trail (4 days, 3 nights) to Machu Picchu, flying over the Nazca Lines, island hopping and snorkeling in the Galapagos Islands. The cities of La Paz, Lima, Cusco and Arequipa were all good for a wander but Guayaquil was disappointing and for our three days in Quito it rained almost all the time. Copacabana on Lake Titicaca was a let-down but climbing to the top of Isla del Sol made up for it. We didn't cycle the death road in La Paz but it is a possibility.
