Expect it to be bloody hot for most of December through February. There'll undoubtedly be bush fires, which you might have to take into account with travelling about (though mostly they'll probably be far away from anywhere you'd intend to go).
Don't sweat what to bring. Anything you'll find out that you really could use, you can just buy there.
If you want to stay in Sydney for NYE, book now. The best places will already be booked solid, and in a month or two, there'll be very little left at all.
As general advice, establish a rough itinerary for how you'd like to travel around the country and what you'd like to see. That way, if you discover you dislike somewhere and want to move on, you don't have to do much research, but can just head out. Other than for that one purpose, treat that itinerary as a loose guideline at best. Follow whims and tips from fellow travellers, stick around if you like the looks of a place, backtrack, do whatever feels good. The country's too large to get to see completely anyway, so better to focus on enjoying the region's you're in than to rush and try to check off all the "must see" boxes.
For farm work, see the for where and when peak times are for various crops, and arrive in those places a bit beforehand, when they're still hiring people.
