Get an Express train to Victoria (every 15minutes). Then take Victoria line (underground) to Green Park and then Jubilee line(underground) to Stratford International.
Total journey time 1hr.

From Gatwick Airport take Thames link train towards Bedford & get off at London St Pancras International.
Take a Southeastern train towards Margate & get off at Stratford International
About 1:15 but less changes.
If you are going to spend a bit of time in London, think about getting an Oyster Card.
