I suggest you consider one or both of the following.

There is a restaurant called the Charthouse directly across the Hudson River in the town of Weehawken. It has gigantic windows that overlook the entire NY skyline and it has great food. You can get there by taking the ferry across the river and then getting a cab the approximately 1/2 mile down to the restaurant.

Alternatively, there are boats called the The Spirit of New York and The Spirit of New Jersey (one leaves from NY side of the Hudson, the other from the NJ side of the Hudson). The boat offers a dinner and dance on-board and it runs exactly past both the Statue of Liberty the Freedom Tower and up the east river, then follows the same route on its return. It is extremely popular as a New Years party thing, but I think it runs most of the summer and part of spring and winter as well (at least on the weekends). This is an unusual thing that your girlfriend might enjoy.

P.S. You will need to reserve both of these items in advance if you plan to go.

Other fun things are booking a great Broadway show at a theatre near Times Square--go to a restaurant near Times Square (like O'Donohues Irish Pub on 44th street) and then to the show right afterwards, or go visit the various kiosks down in Bryant Park behind the main library.

Marie's Crisis is an awesome, small bar where a live pianist leads the crowd in musical showtunes. (It's a gay bar - the atmosphere is so amazing).

Nearby is Big Gay Ice Cream which is a pretty epic experience.

The Red Eye Grill near Central Park is known for their banana cream pie - awesome if you like that sort of thing.

In the same neighborhood, there's a spot called IndiKitchen - so affordable and insanely delicious. Eat in so you can try the "mouth fresheners" on the way out the door.

Book the boats about three days in advance.

The Charthouse restaurant can be booked just a day in advance (as long as it is not for a major holiday, like Christmas or New Years Eve--then book at least two weeks in advance).

There's also a rooftop bar we found when we were there called 230 Fifth, and lights are strung up around / under the Brooklyn bridge at night, with wicked views of the skyline. I also highly recommend a restaurant called the Ellen Stardust Diner. It's just off Broadway, close to Time square. Basically the prices are relatively normal for a diner, but all the servers are either trying to get on broadway, in between broadway shows, or taking a break from it, and sing / perform while they serve you. Literally ask you if things are ok between lines in a song, or walking up behind you, so it's worth going.
