The Pan American Highway is a very popular route for long distance self drivers, it's easy to research, LOTS of bloggers have detailed every step of the way. Loads of great advice out there regarding border crossing documentation requirements (like insurance, vehicle registration, etc.) and other tips.
For Visa info simply look at the Embassy websites of the countries you're passing through and see what's required.
