It really depends on the venue, some will probably be fine but as a rule of thumb I would definitely bring clothes that you could easily cover them. I wouldn't call Australia a conservative country but you might be surprised at how often pubs & clubs will not allow visible tattoos, so I imagine working there would be similar.
Not sure about oz but New Zealand is one of the most tattooed countries in the world, it's part of the culture I wouldn't worry anymore about it here than you would anywhere else.

I think ill just pack one or two long sleeve shirts and just take it as it comes
