Your question is waaaaaay too general. It's a big world out there and the possibilities are endless. It's pointless for anyone to start listing specific destinations when they have absolutely zero info about you personally.
That said, if you're nervous or intimidated then obviously start with a country that while completely foreign is still very open to foreigners, especially budget travellers. Thailand would be one good example.
The best thing you can do right now is to start reading. There's a zillion travel forums, blogs, etc. with an avalanche of information. Basic research will help you zero in on a trip that will fit your needs, then you can start asking more specific questions.

Not a nervous traveller at all or when it comes to meeting new people, ive been many places already! Im quite the adventurous type just a bit lost on where to begin. What I should have stressed is I want to do this independently and I don't know where to start in terms of getting information and help/advice for planning.
I was looking to go around Europe first, ive made up a list of places to go already but would love some opinions and recommendations...
Have thought of Thailand but dont think I could brave it on my own! lol but at the moment it looks like its just me so maybe somewhere nearer home (Wales) would suit me better!

Don't discount a place like Thailand too quickly. It seems a long way away and with a culture vastly different than what you're used to, but that's not the whole story..
1.) It's arguably the easiest backpacker destination on the planet that is still completely foreign to someone from the west.
2.) It has a massive infrastructure for foreign tourists. Transport, accommodation, meals, activities, etc. are all easy to arrange. The usual guide books cover it VERY well.
3.) It's waaaaay cheaper than the west. For an extended trip the additional airfare costs are easily recouped by the much, MUCH lower prices than anywhere in Western Europe.
4.) Lastly and perhaps most importantly, it's filled to the brim with people just like you. This forum has countless posts asking, "I'm going to Thailand alone and need a travel buddy" which gives every experienced traveller a smile because when these nervous travellers get to Thailand they'll discover a country that is jam-packed with new, inexperienced backpackers just like them. There are places in Thailand with so many foreign backpackers that you almost wonder where all the locals live. It's a great place to get your feet wet travelling and when you get tired of the usual backpacker scene it's easy to get off the beaten path and do some real exploring.
I'm not pushing Thailand as the be-all-end-all, I'm just trying to make it clear that there are alternatives to simply starting with something familiar and close and non-intimidating like Western Europe.
What I'd suggest you start thinking about is what culture interests you the most... for a first timer the most popular areas are likely the so-called developed countries where English works and nothing is too terribly different than home (much of Europe, Canada/US, Australia/NZ, etc.) and you have Latin culture (Mexico, Central/South America) and there's Asian (Thailand and Southeast Asia.) All of these areas offer great options for a first time traveller. (Leave the Indian Subcontinent, China and Africa for your second trip, haha...)
