Im in the same situation as i will be 31 when i go next yr (3wks before my 32nd birthday) i got my visa last week so you should be fine. You just have to be 30 when applying for it.
With the health insurance, im assuming you will be getting that when you buy your flight ticket so that should be fine too.
Cant answer your question about the passport as im from the uk so only have the one.
Ive put that im looking to work in accomodation, cafes and restaurants as the others didnt fit what i actually want to do out there. Im mainly looking at doing admin work. Would love to work in a bar on the beach tho! Ha!

I'd like to work with my friend over there.We are planning to do Security Camera Installations, but working in bars at beach sounds like a fabulous plan haha
When you filled out your application did you give specific entry date?Because there is questions "When do you propose to enter Australia using the visa you are applying for now?"Did you answer this question?If you did you've said 2013?
