Honestly, for your very first time away from home I think travelling all the way from the UK to Seoul for only 7 days is nuts.
With such a tiny travel window why don't you choose a destination that is closer? All that expense, travel time and jet lag for only 7 days... doesn't make sense to me.

Most of the time when you buy your round trip plane tickets the price is the same if you go 7 days or 10 days. If you can stay a little longer you only need enough extra money for hostel, transportation, tours and daily food costs.
My experience with South Korea is too old but like many places you visit some things are similar. (When I actually stayed in Korea I was in the military and could take advantage of some subsidized accommodation and transportation.) I have flown through Incheon several times over the past 10 years and the Koreans I have come in contact with spoke enough English to understand me.
How familiar are you with Korean food? Many first time travelers to Asia start in Thailand where it is much cheaper and in my opinion the food is a little easier to take. (Unless you are familiar with Korean food already.) Koreans go to Thailand and Laos for cheap vacations.
As far as cost goes you can find out how much the plane ticket costs using the internet or visiting a travel agency. Take the amount of money you have saved up already subtract the cost of your plane ride and divide what is left over by 7 and you have what is available per day. You already know the cost of your hostel since you booked it already.
Broaden your opportunity for more help by also taking the time to do a Google search for this. There are many blogs by young people doing trips in Korea. My bare bones minimum would be no less than $160 per day US, about 100 GBP. You spend less you bring the remainder home. At my age think I would be more comfortable visiting S. Korea for no less than $200 US a day.
You know you need clothes for 7 days. What is important is what you can not bring on the plane. Check with your airline for what is not allowed on the flight. Show up for the flight at least 2 hours ahead of time not at the last minute. Allow enough time for security checks. Computers must be fully charged at some airports and you may be asked to turn it on. No knives, no big humongous containers of perfume, face cream, hand lotion allowed in carry on. Bags that are too big for carry on may be taken away.
Usually for international flights you do not have to pay for a check in bag. If this is the same with your airline you can use that extra bag for souvenirs you buy.
Passport up to date? Check visa requirements for the country passport you will visit Korea with.
Don't get drunk with total strangers or someone may take advantage of you. Definitely no hanging around with guys who do drugs or you might also have problems with police.
