Any reason why not Israel if it's a Jewish themed trip?
Portugal does have a few influences from Judaism. Maybe the most prolific of these influences was from the 13th Century (Portugals Golden Age of Discovery) - Jewish Portugese gave the world the basis for Portugese navigation (Abraham Zacuto) - Vasco de Gama used these navigation tables while venturing to India.
In terms of landmarks, the Vasco de Gama tomb is in Jeronimos Monestary (quite near Lisbon) and Belmonte has the distinction of housing the worlds first new synagogue for seven decades.
