1,I would ask Air Mexico or Qatar air.
2. I would suspect - yes, a Brazil visa would be needed. Again ask the airlines & / or Brazil immigration.
3. I don't see the relevance of your mentioning a US Visa but guess you will not be allowed on the flights in the first place if you do not have the relevant documents. Or Brazil may let you get a visa on arrival.
Best to get it all sorted before leaving Mexico & what a long trip you have ahead of you. Are there no easier routes you can consider?

So I came from the same route, and that time, I was easily able to transit through brazil, the only issue is while going back, AeroMexico is saying that they will not tag the bag through to Delhi and there is a transit time of 16 hours, while I was coming it was just 6-7 hours of transit.

I think you have answered your own question a bit.
When you arrive in Brazil, you will need to go through immigration to get your luggage. That means you will be entering Brazil & therefore need a visa.
I am going to assume you are an Indian National as you are going from & to India. This is the & is very clear that if you leave the transit area you need a visa.
If your nationality is not Indian, you may may not need a visa
The only alternative as I see it ( & it is only my opinion & not a fact ) is for you to not check your bags & stay in the transit area. Maybe send your bags home by mail - Expensive maybe
