Finding vegetarian food during your time in Europe should not be a problem. You're pretty much guaranteed at least a single (and usually a couple) of options at every single restaurant, and there's a decent amount of truly vegetarian-friendly places in even medium-sized cities. (Worth researching those beforehand, though; is my go-to place for that.)
I don't know if you'd run into any problems with customs importing any food, but when here you can definitely walk into any supermarket and buy yourself many vegetarian options to carry along if you're still worried about finding places to eat.

May tends to be a great month to visit Europe, with generally pleasant weather (15-25 degree daytime temperatures, varying from day to day and generally getting warmer the further south you go). You'll probably encounter a few colder and rainy days, but most of the time it should be dry with a decent chance of sunshine.

I do hope you have more than just the month of May to see that many countries. If you're trying to cram them all in in just a month, you'll have to do a whole lot of being on the road, and won't get to spend enough time in most places to get a good overview of what they're like.

Nothing too essential to carry around - a map of whichever city you find yourself in, a bottle of water, your camera and your wallet. Anything else you tend to be able to just buy wherever you are.
